Tear the 3 bacon slices in half and place on top of the tomatoes in 2 layers. Close the sandwich with the second slice of bread mayonnaise-side down. Cut the BLT in half. Gently press down on the top of the sandwich to compact slightly. Cut in half with the serrated knife and serve immediately.

Step 2: Place the Bacon on the Aluminum Foil. Place the pinched, ridged foil on your baking sheet and lay the bacon down across the foil. You can go perpendicular to the pinched peaks (the preferred method) or horizontal -- ultimately, it doesn't matter all that much. Either way, the bacon fat will drain into the troughs.

For this B.L.A.T. sandwich I like using thick slices of brioche or challah. I also recommend toasting them in a skillet with a generous drizzle of olive oil. Of course you can also just use a toaster, but despite the extra dirty dish and effort, this is my preferred method. Add butter or olive oil to a skillet and heat over medium high.
